Cookies & Milk |
There is absolutely no food that I love more than peanut butter. If given the choice I would eat peanut butter for breakfast, for lunch and most definitely for dinner. Not a day goes by where there isn’t at least one jar of natural chunky peanut butter in my fridge.
As such I was quite amazed to discover that I had never posted about peanut butter cookies. I make these cookies on days when cupcakes just wont do. They’re a soft, slightly crumbly, melt in your mouth sort of cookie. Perfect for cold windy days like today.
PB Cookie Batter |
Ingredients:
- ½ cup Vegan Margarine
- ½ cup Natural Crunchy Peanut Butter
- ¾ cup of Lightly Packed Brown Sugar
- 1 tsp Vanilla Extract
- 1 ¼ cup of flour
- 2 tbsp Starch (arrowroot, ground flax or cornstarch)
- ½ tsp baking powder
- ½ tsp of salt
- 3 to 4 tbsp of Milk
- ½ cup Vegan Chocolate chips
Dough Balls |
Instructions:
- Preheat Oven to 350 and place cookie stone in oven
- Mix Sugar, margarine and peanut butter in mixer
- Add Vanilla and milk
- Mix dry ingredients together in separate bowl
- Add dry ingredients to wet in two increments
- Mix together using spoon until well combined
- Add chocolate Chips
- Roll dough into small ping-pong sized balls
- Bake for 12 to 13 minutes on ceramic stone
- Let Cool and Enjoy

These cookies can be made and baked in less than an hour. They are the perfect quick treat to make for yourself or a friend when time is tight. Special thanks to CPB for lending his Canon 5d for these shots

I never thought I would like peanut butter cookies but one day I was at my favorite little cafe and they were all out of the lemon bars that I usually go for, so I went with the cookie. . . and ohmygosh was it good!
ReplyDeleteSo now I'm a total convert! And thank you for this recipe. Even though I'm not a full vegan anymore (more like 80%) I try refrain from eating animal products as much as possible and this looks delish :)

I have a recently turned began friend, so now I'm constantly on the look out for vegan recipes. I don't know anyone who doesn't like a good peanut butter chocolate cookie, so I'm definitely going to try these! As for my favourite cookie, it's tie between choc chip and Anzac biscuits :)
