Happy Valentine's Day

I have been slowly counting down the days to Valentine’s Day for more weeks than I should probably admit. In fact I decided to start a little early and hand out cookies and a few Valentine’s Day cards in the last couple days. If people can celebrate Christmas for the entire month of December then I can celebrate Valentine’s Day for the entire month of February. Right?

With just one more day until my very favorite holiday, I decided it was time to make some super festive cupcakes.  Behold the 'Valentine’s Day Ice Cream Cone Cupcake'. These cupcakes are pretty simple to make and look great every time. People are almost always amazed at how you get the cake inside the cone.

Chocolate Cupcake Batter

Step 1: Make your favorite cupcake batter, I chose 'Vegan Cupcakes Take Over the World'  basic chocolate recipe.

Ice Cream Cones

Step 2: Line flat-bottom ice cream cones on a baking sheet or in a cupcake tin.

Step 3: Use a funnel and spoon to fill the cones with your batter approximately two thirds of the way full.

In the oven ready for baking

Step 4: Bake as per your cupcake recipe’s instructions until a toothpick comes out clean.

 Step 5: Frost and decorate however you like.
