Peanut Butter Cupcake with Chocoalte Frosting |
When I went back to school this year (after a 2 year academic hiatus) I was a little nervous. Not only about the course workload but also about meeting new people. Despite my worries I ended up meeting a pretty amazing group of girls. This week one of the girls decided to organize and host a potluck dinner for the group. Once I confirmed my attendance I was of course assigned dessert duty.

There are absolutely no flavors I enjoy more than peanut butter and chocolate, combined or served separately. I have wanted to try a cupcake with this flavor combination for a while now but I’ve held off due to the dreaded nut allergy. Luckily all the girls attending were nut allergy free, so I was free to make just what my little heart desired.

I used the 'Peanut Butter Cupcake' recipe from Vegan Cupcakes take over the World. I found the cupcakes were light and fluffy while still maintaining a delicious peanuty taste. I topped the cupcakes with chocolate buttercream and sprinkled the tops with some chopped peanuts.

Chocolate Buttercream:
To make any vanilla buttercream recipe chocolate simply substitute cocoa for a portion of the icing sugar. In my recipe I substituted half a cup but you could certainly substitute more if you like your icing extra chocolaty
Ingredients:
¼ cup margarine
¼ vegetable shortening
2 ½ cup of icing sugar
½ cup cocoa powder
1 tsp of vanilla
3 tbsp of milk
¼ vegetable shortening
2 ½ cup of icing sugar
½ cup cocoa powder
1 tsp of vanilla
3 tbsp of milk
Instructions:
- Blend margarine and shortening together until combined
- Slowly add icing sugar and cocoa powder in increments
- Add vanilla and milk slowly until you achieve your desired consistency

The night ended up being a blast, especially our ridiculous game of Scategories. The girls all loved the 'Chocolate Peanut Butter Cupcakes' and took home the leftovers. Next time I’d like to reverse the flavors and try having a chocolate cupcake with peanut butter icing.
